Instant Pot Clam Chowder Recipe

When making this clam chowder recipe, I did thicken with cornstarch as mentioned.  It thickens up the broth perfectly without sacrificing flavor.  I use an Instant Pot Duo60 6-in1 6 Quart for most of our Instant Pot recipes.  It’s a great investment for your kitchen.  In fact, we love ours so much we now have three of them!  They are perfect for creating delicious meals in minutes instead of hours!

4 strips of bacon, cut into 1/2″ pieces
1/2 cup diced onion
1/2 cup diced celery
2 cups chicken broth
1 cup diced potatoes
1 can, 6.5 oz, minced clams
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 cup half and half
2 tablespoons cornstarch dissolved in 2 tablespoons cold water (optional to thicken soup)
real bacon bits, optional for serving
sliced green onions, optional for serving

Place bacon, onion, and celery into the instant pot and saute until bacon is cooked. The ingredients may stick to the bottom if your bacon is not very fatty. If necessary, add a teaspoon of oil, so ingredients don’t’ stick too much.
(I did not add any additional oil).
Stir in chicken broth and scrape the bottom of the pan to remove all the stuck on bits and add flavor to the soup. Add potatoes, clams, salt, and pepper and mix well.
Close the instant pot and secure the lid shut. Close the pressure release valve and pot to manual, high pressure for 5 minutes. When the cooking cycle is complete, quick release steam and open pot. Stir in butter until melted. Add half and half. If desired, set the pot to saute and when the mixture begins to boil, add cornstarch and water mixture and stir well for soup to thicken.
Serve topped with bacon and green onions.

Our simple Instant Pot Clam Chowder Recipe easily makes 4 servings.  This is a great stand-alone meal with some crusty bread on the side, or a perfect starter soup for a decadent meal.  We love having this on cooler fall and winter days, but it is a recipe you can serve year-round to rave reviews.

    This was absolutely amazing I did not have half-and-half are used a half a cube of cream cheese and one cup of milk I doubled the recipe it was think and creamy and perfect ??
