Meijer Meal Plan Week 9/15: 6 Meals $38

It’s a new week of bringing you these awesome budget-friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on Fresh Outta Time, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1:  Garlic Butter Chicken with Broccoli  $3.72

  • 2 lb chicken thighs
  • 6 cloves garlic, peeled and sliced (pantry)
  • 4 T butter, cut into thin pats (pantry)
  • 1 ½ lb broccoli
  • ½ lemon (pantry)

Directions:  Place the chicken in a baking dish.  Top with garlic and pats of butter, cover with foil and bake in a 350°F oven for 1 hour until the temperature of the chicken reaches 165°F.  Remove the foil and bake another 10 minutes to brown. Steam the broccoli to the desired doneness. Serve with lemon squeezed over the top.

Meal 2: Brats and Squash  $4.34 recipe idea: Rigatoni Pasta + Grilled Brats Recipe

  • 1 pkg Meijer brats, cut into ½ inch pieces (freeze for 30 minutes first)
  • 2 lb winter squash, scrubbed and cut into 1-inch pieces (butternut, acorn, etc)
  • 2 T olive oil (pantry)
  • 4 leaves sage (pantry)
  • Salt (pantry)
  • Pepper (pantry)

Directions:  Place the brats and squash on a rimmed baking sheet.  Drizzle with olive oil and season with salt and pepper.  Roast in a 425°F oven until the brats are cooked through and the squash is tender.  Bruise the sage and add to the pan. Toss gently and return to the oven for 5 minutes.  

Meal 3:  Italian Country Ribs with Pasta  $4.99

  • 1 lb country ribs
  • 1 t oregano (pantry)
  • ½ t basil (pantry)
  • Salt (pantry)
  • Pepper (pantry)
  • 2 jars Meijer pasta sauce (any red variety)
  • 1 box Meijer pasta, any variety

Directions:  Place the ribs in a slow cooker.  Top with oregano, basil, salt, and pepper.  Cover and set to low for 6-8 hours. Remove from the slow cooker and shred, discarding any fat and bones.  Heat the pasta sauce, adding the pork to it. Prepare the pasta as directed on the package. Serve the sauce over the pasta.

Meal 4:  Slow Cooker Chili  $12.71  You can check out our Instant Pot Chicken Chili Recipe or Slow Cooker White Chicken Chili

  • 2 lb top round roast, cut into bite-sized pieces
  • 5 15 oz cans Meijer dark red chili beans
  • 1 28 oz can Meijer petite diced tomatoes
  • 1 29 oz can Meijer tomato sauce
  • Salt (pantry)
  • Pepper (pantry)
  • ¼ C chili powder (pantry)
  • 1 T cocoa powder (pantry)

Directions:  Place all the ingredients into a slow cooker and stir.  Cover and set to low for 6-8 hours. Remove the lid and turn to high for 15 minutes. Serve with cornbread, if desired.  Save the remainder of the chili for the next meal.

Meal 5:  Chili Mac  $1.94

  • Leftover chili
  • 1 box Meijer spaghetti
  • 1 onion, diced, optional (pantry)
  • ½ pkg Meijer shredded cheddar cheese
  • Heat the chili and simmer for 20 minutes.  Prepare the pasta as directed on the package.  Serve the chili over the pasta and top with the onions and cheese, if desired.

Meal 6: Lemony Salmon with Baked Potatoes and Vegetables  $9.59

  • 1 lb Atlantic salmon
  • 1 lemon, sliced thin (pantry)
  • Salt (pantry)
  • Pepper (pantry)
  • 4 Russet potatoes, scrubbed and pierced
  • Butter (pantry)
  • Sour cream (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Place the potatoes in a 425°F oven for 1 hour, or until the flesh is tender when pierced with a fork.  Rinse the salmon and place on a rimmed baking sheet. Season with salt and pepper and lay the lemon slices over the top.  Bake in a 425°F oven for 15 minutes, until the fish in the thickest part flakes easily. Steam the vegetables to the desired doneness.  Serve the potatoes with the butter and sour cream.
