Meijer Meal Planning Week 7/22: 6 Meals Under $49

For this week using the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week!

  • This is based on a family of 4-5so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1: Pork Ribs and Pasta  $6.69

  • 1 ½ lb country ribs
  • 2 jars Ragu pasta sauce
  • 1 t oregano (pantry)
  • ½ t basil (pantry)
  • 2 cloves garlic, minced (pantry)
  • 1 box Meijer pasta, any variety

Directions:  Place the ribs, sauce, and seasonings in a slow cooker.  Cover and set to low for 6-8 hours. Remove the pork, shred, discarding any fat and bones, and return to the slow cooker.  Prepare the pasta as directed on the package. Serve the sauce over the pasta.

 

Meal 2: Salmon and Salad  $9.49

  • 1 lb Atlantic salmon, rinsed and bones removed
  • 1 bag Dole salad kit

Directions:  Place the salmon on a rimmed baking sheet and place in a 425°F oven for 15 minutes, until the fish flakes easily with a fork.  Cut into 4 pieces. Assemble the salad as directed on the package. Serve with the salmon placed on top.

 

Meal 3:  Cheesy Mac & Beef  $8.98

  • 1 40 oz “Family size” Stouffer’s Mac & Cheese
  • 1 lb ground chuck

Directions:  Brown the ground chuck until nearly crispy; drain.  Bake the mac & cheese as directed on the package. Stir in the meat and return to the oven for another 5 minutes.  Serve.

 

Meal 4:  Italian Sausage Sammies with Salad  $11

  • 1 pkg Meijer Italian sausage, any variety
  • 3 green bell peppers, seeds removed and flesh sliced thin
  • 2 onions (pantry), peeled and sliced thin
  • 1 pkg Ballpark Brat Buns
  • 1 pkg Dole Chopped Salad, any variety

Directions:  Place the onions and peppers in a slow cooker.  Top with sausage, cover, and set to low for 6-8 hours.  Serve the sausage, peppers, and onions in the buns. Prepare the salad as directed on the package and serve with the sandwiches.

 

Meal 5:  Chicken Tacos  $6.59 (save time by making this in the Instant Pot. Grab my shredded chicken Instant Pot recipe)

  • 1 4 lb whole chicken, rinsed
  • 2 t ground cumin (pantry)
  • ½ t oregano (pantry)
  • 1 t salt (pantry)
  • ½ t pepper (pantry)
  • 1 can Meijer black beans
  • 1 can Meijer diced tomatoes and chilies
  • ½  pkg La Banderita Ricas tortillas

Directions:  Place the chicken in a large slow cooker and sprinkle with seasonings.  Cover and set to low for 6-8 hours. Remove from the slow cooker, shred the meat, and discard the skin and bones.  Return the meat to the slow cooker, stir, and turn to high for 20 minutes. Heat the black beans to simmering. Serve the meat in the tortillas topped with beans and tomatoes.  

Meal 6:  Steak, Rice, and Vegetables  $5.49

  • 1 lb top round steaks (4)
  • 1 box Rice A Roni, any flavor, with ingredients per package for preparation
  • 1 bag Birds Eye frozen vegetables, any variety

Directions:  Grill, broil, or pan fry steaks to the desired doneness.  Prepare the rice and vegetables as directed on the package.  Serve with steak sauce, if desired.
