Meal 1:  Sunday Chicken with Baked Potatoes and Broccoli  $6.46

  • 1 4 lb young chicken
  • 4 Russet potatoes, scrubbed and pierced
  • Butter (pantry)
  • 2 crowns broccoli

Directions:  Place the rinsed chicken in a roasting pan.  Season with salt and pepper, cover, and bake in a 375°F oven for 2 hours, until the juices run clear when the thigh is pierced.  Remove cover and brown skin for about 10 minutes.  About 1 hour before serving, place the potatoes in the oven.  Bake with the chicken for 1 hour or until potatoes are tender when pierced.  Steam the broccoli crowns to desired tenderness.

Meal 2:  Chicken Shepherd’s Pie  $4

  • 2 cups leftover chicken, diced
  • 2 jars Heinz chicken gravy
  • 1 bag Bird’s Eye mixed vegetables
  • 1 box Idahoan mashed potatoes
Directions:  In a casserole dish, mix the chicken, gravy, and vegetables.  Prepare the potatoes as directed on the package.  Spread over the chicken mix and bake in a 350°F oven for 1 hour, until bubbly and the potatoes are browned.

Meal 3:  Slow Cooker Chili  $5.99

  • 1 lb ground beef
  • 1 onion, diced (pantry)
  • 2 cloves garlic, minced (pantry)
  • 2 cans Bush’s dark red kidney beans
  • 1 can Meijer Naturals petite diced tomatoes
  • 1 can Meijer Naturals tomato sauce
  • 1 T chili powder (pantry)

Directions:  Brown the ground beef, onion, and garlic until no pink remains in the meat; drain.  Place the meat and remaining ingredients in a slow cooker.  Cover and set to low for 6-8 hours.  Serve with cornbread or crusty bread if desired.

Meal 4:  Sausage and Rice with Vegetables  $5

  • 1 pkg Eckrich smoked sausage
  • 2 boxes Country Cheddar Rice a Roni (plus ingredients per directions)
  • 2 bag Bird’s Eye vegetables, any variety

  • Butter (pantry)
  • 1 bag Bird’s Eye vegetables, any variety

Directions:  Place the potatoes in a 400°F oven for 45-60 minutes, until tender when pierced with a fork.  Place the onions in a deep sided saute pan and drizzle olive oil over the top.  Place the pork chops on top and cover.  Cook over medium heat, stirring occasionally to prevent the onions from burning, until the pork chops are cooked through, about 40 minutes.  Prepare the vegetables as directed on the package.

  • 2 lb boneless/skinless chicken breasts
  • ½ C honey (pantry)

  • ½ t parsley (pantry)
  • 1 bag baby carrots
  • 2 T butter
  • 2 T honey
  • 1 box Rice a Roni (with ingredients per package), any variety

Directions:  Place the chicken breasts in a baking dish.  In a bowl, mix the ½ C honey, mustard, basil, paprika, and parsley.  Baste the chicken with half of the mixture and bake in a 350°F oven for 30 minutes.  Turn the chicken over, baste with the remaining sauce, and bake another 15-30 minutes more, until the chicken is cooked throughout.  Steam the carrots to desired doneness, drain, and place in a bowl with the butter and 2 T honey.  Mix well.  Prepare the rice as directed on the package.
