Meijer Meal Planning Week 5/8: 6 Meals Under $41 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meals at Meijer this week are tasty, fresh, and made with lots of great ingredients that are on sale!  Check out these fabulous ideas!

 

Meal 1: Homemade Pizza  $3.69

  • 1 packets yeast (pantry)
  • 1 T sugar (pantry)
  • 3/4 C very warm water (pantry)
  • 2 T olive oil (pantry)
  • 1 T salt (pantry)
  • 2 C flour, plus more for kneading (pantry)
  • 1 jars Meijer Naturals pizza sauce
  • 1 pkg Sargento mozzarella
  • Toppings, as desired

Directions:  In a large mixing bowl, place the yeast, sugar, and water; mix.  Allow to sit for 10 minutes, until the yeast foams.  Add the olive oil, salt, and slowly add the flour, mixing after each addition until a soft dough forms.  Turn out onto a floured counter and knead for 2 minutes.  Place in a bowl sprayed with nonstick cooking spray.  Cover and let sit for 20 minutes in a warm place.  Punch down and press into shape on a greased or cornmeal-dusted pizza pan.  Top with sauce, a thin layer of cheese, any toppings, and the rest of the cheese.  Bake in a 425°F oven for 15-20 minutes, until the crust is golden brown and the cheese is bubbling.

Meal 2: Steak over Salad  $9.68

  • 1 lb Eye of Round Steak
  • 1 bag Dole Greener Salad
  • 1 red pepper, chopped
  • 1 pkg mini Bella mushrooms, cleaned and chopped
  • 1 greenhouse cucumber, chopped
  • 1 bag Marzetti croutons
  • Dressing of choice

Directions: Sprinkle the steaks with salt and pepper and broil or grill until cooked to taste.  Let rest then slice thinly.  Place the salads in individual bowls, top with steak, croutons, and dressing.

Meal 3: Fish Tacos  $11.18

  • 1 pkg cod filets, thawed and patted dry
  • 1 T chili powder (pantry)
  • ¼ t garlic powder (pantry)
  • ¼ t onion powder (pantry)
  • ¼ t crushed red pepper
  • ¼ t oregano
  • ½ t paprika
  • 1 ½ t cumin
  • 1 t salt
  • 1 avocado, peeled and diced
  • 1 pkg Meijer soft taco tortillas
  • 1 pkg Sargento Mexican blend cheese

Directions:  Place the fish on a baking sheet.  In a bowl, mix the spices and sprinkle liberally over the fish.  Bake in a 425°F oven until fish flakes easily with a fork, about 10 minutes.  Cut the fish into pieces, place on tortillas, and stop with avocado and cheese.

Meal 4: Garlic Broiled Chicken Thighs with Broccoli and Rice-A-Roni  $6.18

  • 2 lbs boneless, skinless chicken thighs
  • 1 stick butter
  • 3 T minced garlic
  • 3 T soy sauce
  • ¼ t pepper
  • 1 T dried parsley
  • 2 crowns broccoli, chopped
  • 1 pkg chicken flavored Rice-A-Roni

Directions:  Place the chicken on a rimmed baking sheet.  In a saucepan, melt the butter with the garlic, soy sauce, pepper, and parsley.  Drizzle about half of it over the chicken, reserving the rest for basting.  Place the chicken in the oven about 4 inches from the broiler, which was preheated.  Broil for about 20 minutes, basting and turning every 4 or 5 minutes.  The chicken is done when the juices run clear when cut near the bone.  Serve with any remaining sauce.  Prepare the Rice-A-Roni as directed on the package, adding the broccoli in during the last 5 minutes.

Meal 5: Piquant Pork Ribs with Rice and Vegetables  $3.25

  • 1 ½ lbs country pork ribs
  • 2 T butter (pantry)
  • 1 onion, chopped (pantry)
  • ½ C ketchup (pantry)
  • 2 T apple cider vinegar (pantry)
  • 2 T Worcestershire sauce (pantry)
  • 2 T brown sugar (pantry)
  • 2 T dry mustard (pantry)
  • ½ t salt (pantry)
  • 2 C white or Jasmine rice (pantry)
  • 4 C water (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Place the ribs in a slow cooker.  In a saute pan, cook the onions in the butter until clear.  Place in slow cooker over ribs.  In a bowl, mix the ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, and salt.  Pour over the ribs, cover, and set to low for 6-8 hours.  Place the rice a sauce pan.  Add the water, cover, and bring to a simmer for 20 minutes, until all the water has been absorbed.  Prepare the vegetables according to the package.  Serve the ribs over the rice.

Meal 6:  Stuffed Peppers $6.89

  • 4 bell peppers, any color, top removed and inside cleaned
  • 1 lb ground beef
  • 1 C rice (pantry)
  • 2 C water (pantry)
  • 1 egg (pantry)
  • Salt and pepper (pantry)
  • 1 t dried basil (pantry)
  • Ketchup (pantry)

Directions:  Place the rice in a saucepan, add the water, and cover.  Bring to a simmer for 20 minutes, until no water remains.  Remove from heat and let cool for 30 minutes uncovered, stirring occasionally.  When cool enough to touch, mix the rice with the meat, egg, salt, pepper, and basil.  Stuff the peppers and top with the caps.  Bake, covered, in a 350°F oven for 1 hour.  Uncover and top liberally with ketchup.  Bake another 10 minutes uncovered.  Serve with parmesan, if desired.

 

Six delicious meals will cost an astonishing $40.87 this week!
