Meal Planning Ideas for Meijer

It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1: Crab and Lobster Cakes with Broccoli  $6.98

  • 1 8 oz pkg Meijer imitation crab meat
  • 1 8 oz pkg Meijer imitation lobster meat
  • 1 8 oz pkg Meijer cream cheese
  • 1 small onion, diced (pantry)
  • 1 T capers (pantry)
  • 2 T bread crumbs (pantry)
  • ½ C breadcrumbs (pantry)
  • Olive oil (pantry)
  • 2 broccoli crowns, cut into pieces

Directions:  In a bowl, mix the meats, cream cheese, onion, capers, and 2 T bread crumbs.  Form into four patties and coat with the remaining bread crumbs. Heat ¼ inch of olive oil in a deep pan.  Saute the patties until golden brown and turn over. When both sides are browned, remove from the heat. Steam the broccoli to desired tenderness.  Serve with the patties.

Meal 2:  Stewed Chicken Thighs with Garlicky Green Beans  $3.96

  • 2 lb chicken thighs
  • 1 t salt (pantry)
  • ½ t pepper (pantry)
  • ½ t garlic powder (pantry)
  • 3 T olive oil (pantry)
  • 2 large onions, chopped (pantry)
  • 3 carrots, chopped (pantry)
  • 3 C chicken stock (pantry)
  • 2 T tomato paste (pantry)
  • 2 T flour (pantry)
  • 2 lb green beans, ends trimmed
  • 2 cloves garlic, minced (pantry)
  • 2 T butter (pantry)

Directions:  Season the chicken with the salt, pepper, and garlic powder.  Brown both in a deep Dutch oven with the olive oil. Remove from the pan and add in the onions and carrots.  Saute until tender. Add in the tomato paste and stir well. Add in the stock and chicken, bring to a boil, cover, and reduce to a simmer for 30-40 minutes, until the chicken is cooked through and tender.  Remove the chicken, add in the flour, and stir until thickened. Serve the juices over the chicken. Heat the butter in a saute pan over medium-high heat. Add in the green beans and saute, stirring often. When the beans just start to become tender, add in the garlic and saute until the beans are slightly caramelized.  

Meal 3:  Pan Fried Pork Medallions with Sweet Potatoes  $6.35

  • 2 lb pork loin, sliced 1 ½ inches thick and pounded ½ inch thick
  • Salt and pepper (pantry)
  • 3 T Olive oil (pantry)
  • 1 onion, diced (pantry)
  • 2 T Worcestershire sauce (pantry)
  • ½ C chicken stock (pantry)
  • 2 T flour (pantry)
  • 4 sweet potatoes, scrubbed and pierced
  • Butter (pantry)

Directions:  Place the potatoes in a 425°F oven for 1 hour or until tender when pierced with a fork.  Season the pork with the salt and pepper on both sides. Heat the oil in a saute pan over medium-high heat.  Add the loin slices and saute until brown, flipping to brown the other side, cooking until no pink remains in the center.  Remove from the pan and add the onion, sauteing until tender. Add the Worcestershire sauce and chicken stock. Whisk in the flour and cook until thickened.  Add the pork chops back into the sauce. Serve with the sweet potatoes, buttered if desired.

Meal 4:  Cheesy Shepherd’s Pie  $8.36

  • 1 lb ground beef
  • 1 bag Meijer frozen vegetable soup mix
  • 2 pkts Meijer brown gravy mix (plus ingredients per the package)
  • 2 pkts Idahoan Cheddar and Sour Cream mashed potatoes (plus ingredients per the package)
  • 1 C Meijer shredded sharp cheddar cheese

Directions:  Brown the ground beef in a saute pan and drain.  Add in the gravy packets and water, per the directions.  Cook until thickened. Add in the vegetables and transfer to a casserole dish.  Prepare the potatoes as directed on the package and spread over the casserole. Bake in a 400°F oven for 30 minutes.  Sprinkle with the cheese and return to the oven for 5 minutes.

Meal 5:  Cheesy Smoked Sausage and Pasta Casserole  $5.38

  • 1 pkg Johnsonville smoked brats, sliced into ½ inch pieces
  • 1 box Meijer rotini pasta
  • 1 pkg Meijer shredded Colby jack cheese
  • 1 C milk (pantry)
  • ½ t dry ground mustard (pantry)

Directions:  Prepare the pasta according to the package directions and drain.  In a casserole pan, layer the pasta, brats, and cheese. In a bowl, whisk the milk and mustard.  Pour over the casserole, cover, and bake in a 350°F oven for 35 minutes, until bubbling and hot.

Meal 6:  Roasted Salmon with Corn on the Cob  $8.33

  • 1 lb Atlantic salmon, cut into 4 pieces
  • Salt and pepper (pantry)
  • 4 ears sweet corn, husks and silk removed
  • Butter (pantry)

Directions:  Bring a large pot of water to a boil.  Place the salmon pieces on a rimmed baking sheet.  Season with the salt and pepper. Roast in a 400°F oven for 15 minutes, until the fish flakes easily with a fork.  Add the corn to the pot of boiling water and remove after 3 minutes. Serve the fish and corn with butter, if desired.
