Meijer Meal Planning Week 3/20: 6 Meals Under $43

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

 

Meijer has some pretty good sales this week, and with those, you can create wonderful meals to feed your family that they will love.  Check out these six meals to make your family happy!

 

Meal 1: Smothered Pork Chops, Mashers, and Veggies  $8.99

  • 1.5 lb pork loin, sliced into 4 chops
  • 1 large onion, sliced (pantry)
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 7 T butter (pantry)
  • 2 T olive oil (pantry)
  • 1 t seasoned salt (pantry)
  • 1 t lemon pepper (pantry)
  • ½ t cayenne pepper (pantry)
  • ½ t cumin (pantry)
  • ¼ t salt (pantry)
  • ¼ t ground pepper (pantry)
  • ½ C flour (pantry)
  • 1 ½ C Swanson chicken stock
  • 3 T flour (pantry)
  • 1 T cream or whole milk (pantry)
  • 2.5 lbs red potatoes, scrubbed and cubed
  • Milk and butter (pantry)
  • Bird’s Eye frozen vegetables, any variety

Directions:  In a large saute pan, place 2 T butter, the onion and peppers.  Saute until tender over medium heat.  In a shallow bowl, mix the ½ C flour, salts, peppers, and cumin.  Rinse the chops and dredge them in the flour.  Remove the onions and peppers from the pan, add 2 T butter and the olive oil.  Fry the chops over medium high heat until well browned on both sides and no pink remains in the centers.  Remove to a platter and return the onions and peppers to the pan.  Add the remaining 3 T butter and allow to melt.  Add in the 3 T flour, stirring well, then slowly add in the chicken stock to form a gravy.  Bring to a simmer and allow to thicken.  Remove from heat, stir in the cream, and serve the sauce and onion pepper mixture over the chops and mashers.  To make the mashers, while the onions and peppers are cooking, add the potatoes to a saucepan and cover with water, sprinkling with salt if desired.  Bring to a boil and cook until tender, about 20 minutes.  Drain and mash with milk and butter to the desired consistency.  Prepare the frozen vegetables as directed on the package.

 

Meal 2:  Breakfast for Dinner On the Go  $8.59

  • 1 pkg Bob Evans breakfast sausage links
  • 4 eggs (pantry)
  • 2 pkgs Pillsbury Crescent Roll Sheets
  • 1 pkg Meijer cream cheese, cut into small pieces
  • ½ pkg Kraft shredded cheddar

 

Directions:  Bake the sausages on a baking tray in a 350°F oven for 10 minutes.  Remove and allow to cool for a few minutes.  Whisk the eggs and scramble in a saute pan until set but still moist.  Remove from heat.  Roll out the crescent roll sheets and cut into strips along the long end just a bit wider than the sausages are long.  Dot with cream cheese and sprinkle with cheddar.  Place a sausage at one short end, top with eggs, and roll into a sausage roll, sealing the ends by pressing.  Bake on a baking sheet in a 350°F oven for 20 minutes, until the crust is golden brown.  Serve warm.

 

Meal 3: Fish and Chips with a side of Veg  $7.49

  • 1 pkg Gorton’s Fish, 10 pk any variety
  • 1 bag Ore-Ida fries, any variety
  • 1 pkg Bird’s Eye vegetables, any variety
  • ½ C mayonnaise (pantry)
  • 3 T dill relish (pantry)
  • 1 t brown mustard (pantry)

 

Directions:  Prepare the fish, fries, and vegetables according to the package directions.  While they are heating, in a small bowl mix the mayonnaise, relish, and mustard.  Serve with the fish.

 

Meal 4:  Chicken with Stuffing and Broccoli  $4.49

  • 1 ½ lbs split chicken breasts
  • 1 box Stove Top stuffing, chicken flavor
  • water/butter for stuffing mix (pantry)
  • 1 lb fresh broccoli, chopped

 

Directions:  Spray a casserole dish with nonstick cooking spray.  In the dish, mix the stuffing according to the package directions for baking.  Add the broccoli and stir well.  Place the chicken on top, cover with foil, and bake in a 350°F oven for 1 hour, until no pink remains in the chicken.  Serve hot.

Meal 5:  Ground Beef Pinwheels  $8.73

  • 1 lb ground beef
  • 1 C sliced mushrooms
  • 3 C New Star baby spinach
  • 1 small onion, diced
  • 1 t salt
  • ½ t pepper
  • ½ C Kraft shredded cheddar cheese
  • 1 pkg Meijer refrigerated pizza dough

Directions:  In a skillet, brown the ground beef, onions, and mushrooms until no pink remains in the beef.  Add the spinach and allow to wilt; sprinkle with salt and pepper.  Remove from heat and drain any juices.  Roll out the pizza dough into a rectangle.  Spread the meat mixture on the dough, leaving ½ inch of the short end of the dough uncovered.  Sprinkle with cheese.  Starting with the covered short end, roll to the uncovered short end, sealing the short end by pinching.  Slice into pinwheels, using a gentle sawing motion.  Place cut end down on a greased baking sheet.  Bake in a 425° oven for 18-20 minutes, until dough is browned.  Serve hot.

Meal 6:  Roasted Smoked Sausage, Peppers, and Sweet Potatoes  $4.54

  • 1 green pepper, sliced
  • 2 lbs sweet potatoes, scrubbed and diced
  • 1 pkg Hillshire Farms smoked sausage, sliced into rounds
  • 1 small onion, sliced
  • 2 cloves garlic, peeled and sliced
  • 1 ½ t Italian seasoning
  • 1 t salt
  • ½ t pepper
  • Olive oil

Directions:  Heat oven to 375°F.  Spray a baking sheet with nonstick cooking spray.  Add the meat and vegetables.  Drizzle with olive oil and sprinkle with seasonings.  Roast in the oven for 40-45 minutes, until the potatoes are tender, turning occasionally.

There you have it!  Six delicious meals for only $42.83!
