For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

St. Patrick’s Day is this week, and Easter Sunday is next.  Meijer has some great sales to help make those days amazing, plus, they’ve got some fantastic prices on everyday meal items!  Check out these six meals that will give your family a great time to come together!

Meal 1: Herb Roasted Pork Loin over Rice  $6.52

  • 2.5 lb boneless pork loin
  • 1 can Meijer stewed tomatoes
  • 1 T oregano (pantry)
  • ½ t salt (pantry)
  • ½ t pepper (pantry)
  • 1 t rosemary (pantry)
  • 2 C Meijer long grain rice
  • 4 C water (pantry)

Directions:  Mix the oregano, salt, pepper, and rosemary in a small bowl.  Rub on the pork and place in a slow cooker.  Add the stewed tomatoes, cover, and set to low for 6 to 8 hours.  About 30 minutes before serving, place the rice and water in a large saucepan.  Cover and bring to a simmer over medium heat for 20 minutes, until the rice is tender.  Serve the pork with the tomatoes over the rice.

Meal 2:  Roasted Ham with a Simple Salad and Corn  $11.92

  • 7 lb Cook’s spiral sliced ham
  • 1 lb Roma tomatoes, chopped
  • 1 greenhouse cucumber, sliced
  • ¼ C olive oil (pantry)
  • ¼ C cider or red wine vinegar (pantry)
  • ½ t salt (pantry)
  • 1 clove garlic, minced (pantry)
  • 1 bag Meijer frozen corn

Directions:  Place the ham in a roasting pan and cover tightly with foil.  Roast in a 350°F oven for 3-4 hours, until ham is tender and falling off the bone.  Place the tomatoes, cucumber, olive oil, vinegar, salt, and garlic in a bowl.  Mix well and chill.  Prepare the corn as directed on the package.

Meal 3:  Ham Quiche  $4.62

  • 1 Pillsbury pie crust
  • 6 eggs
  • 1 ½ C half & half
  • 1 C leftover diced ham
  • 1 pkg Meijer shredded Swiss cheese

Directions:  Place the pie crust in a pie pan and form to the pan.  In a bowl, whisk the eggs and half & half.  Place the diced ham and shredded cheese in the bottom of the pie crust.  Pour the egg mixture over the top and bake in a 375°F oven for 40 minutes, until a knife inserted into the center comes out clean.  Serve warm.

Meal 4:  Slow Cooker Corned Beef and Cabbage $10.91

  • 2.5 lb corned beef brisket
  • 2 lb cabbage, cut into chunks
  • 2.5 lb red potatoes, scrubbed and halved
  • 4 cloves garlic, peeled (pantry)
  • 1 C cider vinegar (pantry)

Directions:  Place the corned beef, including the juices and seasoning packet, into a large slow cooker.  Add the cabbage, potatoes, garlic, and vinegar.  Cover and set to low for 6-8 hours.  Serve with crusty bread, if desired.

Meal 5: Garlic Tilapia with Wild Mushroom Couscous  $4.98

  • 1 pkg Meijer frozen tilapia, thawed and rinsed
  • 2 cloves garlic, minced (pantry)
  • Salt & pepper (pantry)
  • 2 T olive oil (pantry)
  • 1 lemon, sliced (pantry)
  • 1 box Near East couscous, Wild Mushroom & Herb

Directions:  Place the tilapia on a baking sheet.  In a small bowl, mix the olive oil and garlic.  Brush the fish with the mixture and sprinkle with salt and pepper.  Bake in a 425°F oven for 12-15 minutes, until fish flakes easily with a fork.  Prepare the couscous as directed on the package.

Meal 6:  Brats with Onion Rings and Vegetables  $7.95

  • 1 pkg Johnsonville brats
  • 1 pkg Aunt Millie’s hot dog buns
  • 1 pkg Meijer frozen onion rings
  • 1 pkg Meijer frozen vegetables

Directions:  Place the brats on a baking tray and bake in a 400°F oven for 15-20 minutes, until the skin starts to split.  Prepare the onion rings and vegetables per the package directions.  Serve the brats in the buns with your favorite condiments.

Six meals this week will cost you $46.90, a pretty easy sum for all these great meals with lots of leftover ham for soups and other meals.
