Whew!  The hustle and bustle of Christmas is about over with and now it’s time to settle down into our schedules for the longest parts of winter.  But it doesn’t have to be boring!  Here are six recipes that bring warmth into the long winter nights and are super easy to get to the table!

Meal 1: Unstuffed Cabbage Rolls  $9.92

  • 2 lbs ground beef
  • 1 onion, diced (pantry)
  • 4 cloves garlic, minced (pantry)
  • 2 14.5 oz can Ro-Tel tomatoes
  • 1 8 oz can tomato sauce
  • ½ C water
  • salt (pantry)
  • pepper (pantry)
  • 1 small head (2-3 lbs) cabbage, cored and roughly chopped

Directions: Brown the ground beef, onion, and garlic in a deep Dutch oven or stock pot.  Drain; add remaining ingredients and bring to a simmer.  Cover and simmer 20-30 minutes, until the cabbage is tender.  Serve hot with crusty bread, if desired.

Meal 2: Chicken and Mushrooms with Buttered Noodles  $8.23

  • 2 boneless, skinless chicken breasts
  • 1 pkg baby bella mushrooms, cleaned and sliced
  • 2 T olive oil (pantry)
  • salt and pepper (pantry)
  • ½ C chicken stock (pantry)
  • 1 T butter (pantry)
  • 1 pkg egg noodles
  • 2 T butter (pantry)

Directions:  Season the chicken with salt and pepper.  Heat a deep skillet over medium heat; add the oil and chicken.  Brown the chicken on both sides evenly.  Add the mushrooms and turn the heat to medium-high.  Cook, stirring occasionally, for about 5 minutes.  Reduce heat to medium, add stock, cover, and cook about 20 minutes, until the chicken is no longer pink in the middle.  Stir the mushrooms and bits off the bottom of the pan; add the butter and allow to melt.  Serve over egg noodles, cooked per package directions and topped with 2 tablespoons of butter.

Meal 3: Slow Cooker Chicken Taco Night $7.71

  • 1.5 lbs boneless skinless chicken breasts
  • 1 jar Chi-Chi’s salsa, any variety
  • 1 pkg Taco Bell Crunchy Shells
  • 1 can Ro-Tel tomatoes, drained
  • 1 8 oz container Meijer sour cream
