It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on Fresh Outta Time, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1: Salmon and Salad  $12.60

  • 1 lb Atlantic skin on salmon
  • ½ 16 oz tub Earthbound Farms salad mix
  • 1 pint grape tomatoes, halved
  • 1 cucumber, sliced thin
  • 1 avocado, diced
  • Salad dressing (pantry)

Directions:  Place the salmon on a rimmed baking sheet and season with salt and pepper.  Bake in a 425°F oven for 10-15 minutes, until the salmon flakes easily with a fork.  Flake the salmon, discarding bones and skin. Arrange the salad in 4 bowls with the salad mix, tomatoes, cucumber, and avocado.  Top with salmon and salad dressing.

Meal 2:  Easy Meat Sauce and Pasta  $5.99

  • 1 lb ground chuck
  • 2 cloves garlic (pantry)
  • 1 onion, diced (pantry)
  • 2 jars Meijer pasta sauce, any red variety
  • 1 box Meijer pasta, any variety
  • Directions:  Brown the ground beef, garlic, and onions in a saute pan; drain.  Place in a slow cooker with the pasta sauce. Cover and set to low for 3-4 hours.  Prepare the pasta as directed on the package and serve with the sauce.  

Meal 3:  Chineses Spareribs with Rice and Vegetables  $4.18

  • 2 lb pork spareribs
  • 3 T soy sauce (pantry)
  • 1 t ground fresh ginger (pantry)
  • 1 t brown sugar (pantry)
  • ½ T Dynasty Chinese 5 spice powder
  • 1 T ketchup (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  In a large plastic zippy bag, mix the soy sauce, ginger, sugar, 5 spice powder, and ketchup.  Add the spareribs and turn to coat. Allow to marinate in the refrigerator overnight. Place on a rack in a baking pan, cover with foil and bake at 350°F for 1 hour.  Remove the foil and increase the temperature to 400°F for 15 minutes, until the ribs are browned and caramelized. Place the rice and water in a saucepan. Cover and bring to a simmer for 15 minutes, until the rice is tender and the water is absorbed.  Steam the vegetables as desired. 

Meal 4:  Greek Chicken with Lemon Potatoes  $5.16

  • 2 lb chicken thighs
  • 1 t dried oregano (pantry)
  • ½ t salt (pantry)
  • 1 lemon, sliced thin
  • 4 russet potatoes, cut into cubes
  • Juice of 1 lemon
  • ½ C olive oil (pantry)
  • 1 C chicken stock (pantry)
  • 1 clove garlic, minced (pantry)
  • ½ t dried oregano (pantry)
  • Salt and pepper (pantry)

Directions:  Place the chicken thighs in a baking dish.  Top with oregano, salt, and lemon slices. Cover and bake in a 350°F oven for 1 hour.  Remove the cover and continue to bake for another 30 minutes. At the same time, Place the potatoes in a 9×13 baking dish.  Mix the lemon juice, oil, stock, garlic, ½ t oregano, and salt and pepper in a bowl. Pour over the potatoes, cover and bake in the same oven as the chicken, for 1 ½ hours.  Remove the foil, increase the temperature to 400°F and bake another 15 minutes to crisp the potatoes.  

Meal 5:  Pork Chops with Stuffing and Vegetables  $6.16

  • 2 lb assorted pork chops
  • 2 boxes Meijer pork stuffing mix, plus ingredients per package
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Mix the stuffing as directed on the package and place in a slow cooker.  Top with the pork chops, cover, and set to low for 6-8 hours. Prepare the vegetables as directed on the package.  

Meal 6:  Chicken Sausage and Fries  $6.08

  • 1 pkg Meijer chicken sausage, any variety
  • 1 pkg Meijer hotdog buns
  • 1 pkg Meijer french fries, any variety

Directions:  Grill or broil the sausage to desired doneness.  Place in the buns. Prepare the fries as directed on the package.  

This week, six family-friendly meals will cost only $40.17!
