It’s a new week at Meijer, and it’s also the 10 for 10 sale at Meijer this week. Here’s a new meal plan for this week, sharing 6 easy meals you can make based off the Meijer Weekly Ad.

This meal plan is based on a famly of 4, so you will need to adjust it to fit your family size.

Meal 1:  Marinated Tuna Steaks with Pan Fried Asparagus  $6.87

  • 1 pkg Meijer frozen tuna steaks, thawed
  • ½ C olive oil (pantry)
  • ¼ C apple cider vinegar (pantry)
  • 1 t salt (pantry)
  • 1 t oregano (pantry)
  • 1 lb asparagus
  • 2 T butter (pantry)
  • Juice of ½ lemon (pantry)

Directions:  Place the tuna, oil, vinegar, salt, and oregano in a plastic zippy bag.  Seal and coat the fish with the marinade. Allow to sit overnight in the refrigerator.  Remove from the bag and place on a rimmed baking sheet. Bake in a 425°F oven for 15 minutes or until the meat flakes easily with a fork.  Clean the asparagus by rinsing and snapping off the cut ends. In a saute pan, melt the butter over medium heat. Add the asparagus and saute until slightly browned.  Sprinkle the juice over the top.

Meal 2:  Pork Loin Two Ways: Pulled Pork Subs with Cole Slaw  $8.76

  • 4 lbs center cut half boneless pork loin
  • 2 t oregano (pantry)
  • 4 garlic cloves, minced (pantry)
  • 1 t salt (pantry)
  • ½ t pepper (pantry)
  • ½ t marjoram (pantry)
  • 1 loaf crusty French baguette
  • 1 bag Pearson Foods coleslaw mix
  • ½ C mayonnaise (pantry)
  • 2 t sugar (pantry)

Directions:  Place the pork loin in a slow cooker, fat side up.  In a bowl mix the oregano, cloves, salt, pepper, and marjoram.  Spread over the pork, cover, and set to low for 6-8 hours. Remove the pork from the slow cooker, discard any fat, and shred half the loin.  Cut the bread into 4 pieces, then cut open like a sub roll. Stuff with the shredded pork. In a bowl, mix the slaw mix, mayo, and sugar. Serve on the side.  Reserve the second half of the pork loin for the next meal.

 

Meal 3:  Pasta with Shredded Pork  $3.00

  • 2 jars Prego pasta sauce, any red variety
  • 2 cloves garlic, minced (pantry)
  • Leftover pork loin, diced (pantry)
  • 1 box Meijer pasta, any variety

Directions:  Place the sauce in a slow cooker with the pork and garlic.  Cover and set to low for 6-8 hours. Prepare the pasta as directed on the package.  Serve the sauce over the pasta.

Meal 4:  Pan Roasted Chicken with Creamy Spinach  $6.54

  • 2 lb boneless skinless chicken breasts, sliced butterfly style
  • 2 T olive oil (pantry)
  • Salt and pepper (pantry)
  • 1 clove garlic, minced (pantry)
  • 2 10 oz bags NewStar fresh spinach
  • 1 8 oz pkg Meijer cream cheese, cut into small pieces

Directions:  Heat the oil in a saute pan over medium-high heat.  Sprinkle the chicken with salt and pepper and cook in the saute pan, turning over after 4-5 minutes.  Remove when cooked through. Reduce heat to medium and add the garlic. Saute for 1 minute then add the spinach, stirring until wilted.  Add in the cream cheese and stir until melted. Add the chicken back to the pan and heat through.

 

Meal 5:  Meatloaf with Macaroni and Cheese  $7.58

  • 2 lb ground beef
  • 2 eggs (pantry)
  • 1 t salt (pantry)
  • ¾ t pepper (pantry)
  • ½ t garlic powder (pantry)
  • 1 t Worcestershire sauce (pantry)
  • ½ C breadcrumbs (pantry)
  • 2 boxes Kraft macaroni and cheese (plus ingredients per directions)

Directions:  In a bowl, mix the ground beef, eggs, and seasonings.  When well mixed, add the breadcrumbs and mix well. Place on a rimmed baking sheet and form into a loaf.  Bake in a 425°F oven for 1 hour or until no pink remains in the center. Prepare the macaroni and cheese as directed on the package.

 

Meal 6:  Slow Cooker Corned Beef and Cabbage with Carrots  $11.89

  • 3 lb Meijer corned beef with seasoning packet
  • 1 4 lb cabbage, core removed, cut into wedges
  • 1 1 lb bag baby carrots

Directions:  Open the corned beef package into a slow cooker, allowing the juices to cover the meat, fat side up.  Sprinkle with the contents of the seasoning packet. Add in the cabbage and carrots. Cover and set to low for 6-8 hours.  Serve with crusty bread, if desired.

 

This week, six mouthwatering meals will cost only $44.64!
