Easy Summer Pasta Primavera #recipe

Summer Pasta Primavera is Fresh and Delicious
Summer is just around the corner, and fresh produce is starting to find it’s way into your favorite markets. Personally, I can’t wait to be able to pick everything from my own garden. Summer Pasta Primavera brings everything together in one dish for a taste of absolute perfection. It’s also one of the most versatile dishes I’ve ever made. You can use whatever summer veggies you have and like to make easy Summer Pasta Primavera your very own.
Fresh Veggies for Summer Pasta Primavera
Summer Pasta Primavera starts out with my favorite zucchini and yellow squash. They are the epitome of summer to me. Eggplant comes in a close second comparatively. The three are the basis of so many of my summer dishes. A colorful pepper adds sweetness and crisp to the mix, while an onion and some garlic add the earthy flavor that brings the other flavors together. Grape tomatoes add not only color but a vibrate flavor that brightens the entire dish. Once the vegetables are cooked to perfection, I add a squeeze of lemon juice to amp up the flavor before sprinkling them with shaved parmesan. It’s my little secret with my family. They have no idea what makes this dish as fantastic as it is. Just a bit of lemon juice makes Summer Pasta Primavera beyond delicious.

Summer Pasta Primavera Ingredients

2 T olive oil
3 small zucchini, sliced
2 small yellow squash, sliced
1 small eggplant, diced
1 small onion, diced
3 cloves garlic, peeled and minced
1 sweet pepper, cleaned and cut into strips
1 pt grape tomatoes, washed
juice of 1 lemon
1 lb angel hair pasta
parmesan cheese

Summer Pasta Primavera Zucchini

Heat a large pot of water to boiling. Cook the pasta according to the directions on the package.
Heat a large skillet over medium high heat. Add the zucchini, yellow squash, eggplant, onion, garlic, pepper, and tomatoes. Stir occasionally to keep from sticking.
Place the cooked pasta in a large bowl.
When the vegetables are crisp-tender, sprinkle with the lemon juice and stir.
Place the cooked vegetables over the pasta and sprinkle with parmesan cheese.
Serve hot.
