We often pick up stew meat on sale for recipes like this, but you can really use any chunks of beef you prefer.  A good chuck roast or even round steak can be cut into pieces for this recipe.  It all depends upon your budget and personal preferences.  It also works wonderfully with some venison roasts cut into chunks if you have a hunter in the family to provide you with free meat!
The Instant Pot 6-Quart DUO60 is our favorite choice for making this recipe, but you can easily use any electric pressure cooker.  Just double check the manual to convert settings as needed for your cooker.

  • 1 tablespoon oil
  • 1 lb beef stew meat
  • 1/2 cup chopped white onion
  • 1/2 cup chopped celery
  • 3 cups beef broth
  • 3 large potatoes, cut into 1/2″ pieces
  • 1 cup chopped carrots
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper
Optional to thicken:
2 tablespoons cornstarch dissolved in 2 tablespoons cold water

  1. Add oil, meat, onion, and celery to instant pot and saute until beef is brown.
  2. Add remaining ingredients and mix well. Place the lid on the instant pot and close. Seal the pressure release valve shut. Set the instant pot to manual, high pressure for 8 minutes. When the cooking cycle is complete, quick release steam and open pot.
  3. When you open the pot you can carefully pour in the cornstarch and stir well for the stew to thicken. Or you can set the pot to saute, wait for it to bubble and boil and carefully stir in the cornstarch and water mixture until thick.
  4. Serve with hot biscuits.
