Scrumptious Breakfast Pizza

Scrumptious Breakfast Pizza is Not Your Average Takeout

Everyone has a favorite pizza that they love cold in the morning for breakfast.  But what about a freshly made, perfectly seasoned pizza that actually has a favorite breakfast food, eggs, on it?  I know, it might sound odd, but when I was scrambling for breakfast the other morning, Scrumptious Breakfast Pizza formed in my head and took shape on my favorite pizza stone.  It was a hit.  It only took minutes to make, and Scrumptious Breakfast Pizza was on the table in less than 30 minutes from when I walked into the kitchen.  Can breakfast get any better than that?  I don’t think so.

Toppings for Scrumptious Breakfast Pizza

I made it simple to make Scrumptious Breakfast Pizza.  I cheated with a tube of refrigerated thin crust pizza dough.  Since I wanted Scrumptious Breakfast Pizza narrow, like a flatbread pizza, I cut it in half lengthwise and made two pizzas from one crust.  For sauce, I grabbed a jar of my favorite Classico Fire Roasted.  It has a great flavor that lent itself well to Scrumptious Breakfast Pizza.  I grabbed a few handfuls of herbs out of my garden, including chives, basil, and rosemary.  They make a wonderful blend on any pizza, breakfast or otherwise.  Instead of the traditional mozzarella, I used some ricotta, found near the cream cheese in your favorite dairy case.  This creamy cheese is fantastic to hold the eggs in place on Scrumptious Breakfast Pizza.  Lastly, fresh eggs made a baked debut on the pizzas.  Baking them created a creamy egg that was delicious and tender on a Scrumptious Breakfast Pizza.

Scrumptious Breakfast Pizza Ingredients

1 refrigerated pizza crust, opened and cut in half

1 jar pizza sauce

1 handful herbs

1 C ricotta cheese

Parmesan cheese

6 eggs

 

Heat oven to 425 degrees F.

Lightly spray pizza stone or pan with nonstick cooking spray.

Roll out ½ of the pizza dough in a long rectangle, curling the edges.

Spread a few tablespoons of pizza sauce and top with the herbs.

Drop the ricotta cheese in little balls over the sauce and sprinkle lightly with Parmesan.

Slide the rack out of the oven and place the stone on it; crack three of the eggs on the pizza, spacing them evenly.

Slide the rack back in and bake 10-15 minutes, until crust is crispy and eggs are set.

Repeat with remaining ingredients.

Serve hot.

 

Making Scrumptious Breakfast Pizza for a Crowd

It’s pretty easy to make Scrumptious Breakfast Pizza for others in your house.  Simply put the ingredients out and make a pizza bar.  Each person can make their own Scrumptious Breakfast Pizza, adding whatever ingredients you like.  Try crispy bacon or sausage, cheddar cheese, or any other items you think would be delicious on Scrumptious Breakfast Pizza.  I’ve used green olives on a second one I made that was fantastic.  Let your imagination run wild and everyone can enjoy Scrumptious Breakfast Pizza.
