The Perfect Side Dish is Parmesan Creamed Spinach

Spinach is one of those foods with which we have a love-hate relationship. Most people find it mushy, slimy, and just generally icky. And if it comes from a can, I’d have to agree. I’ve turned people’s opinions around though with Parmesan Creamed Spinach. Beautiful fresh baby spinach is the key to great spinach dishes, including Parmesan Creamed Spinach. From there, it’s all about adding layers of flavor. I do that with garlic, parmesan, fresh cream, and butter. All natural, whole ingredients that don’t come from a can or box. That’s why Parmesan Creamed Spinach is always on my holiday tables.
Parmesan Creamed Spinach Takes Fresh Ingredients
I make Parmesan Creamed Spinach not only on holidays, but also when baby spinach is on sale, making this dish wildly economical. I found a 24 ounce bag for $2.99 at the grocery store, and knew it was time to make it. When you look at how big the bag is, realize that it will wilt down A LOT! I made a whole 14 inch saute pan full, closing the lid on a completely full pan. Once it was wilted, it was enough for 4 people. So adjust the recipe accordingly. I make sure my cream is fresh, so it has a sweet flavor. My garlic is fresh as well, as it provides a slightly spicy flavor. When you put it all together with the parmesan, it’s amazing.

Parmesan Creamed Spinach Ingredients

½ C (1 stick) butter
1 pint heavy cream
1 ½ C grated parmesan
freshly ground black pepper
24 oz fresh baby spinach

Melt the butter in a large saute pan over medium heat..
Once the butter is completely melted, add in the cream and stir.
When the cream has heated, sprinkle the parmesan into the cream. Stir and allow to melt.
Add ground black pepper and allow the pepper to bloom, about 30 seconds.
Place the spinach in the cream sauce, turning occasionally to bring the wilted spinach to the top and the fresh spinach to the bottom.
Cover and allow to steam for 2 minutes.
Serve hot.

Parmesan Creamed Spinach Isn’t Just a Side Dish
I love to use Parmesan Creamed Spinach for several other things besides just a side dish. It’s phenomenal as a sauce and topping on a pizza. It’s also amazing over baked or grilled chicken. Serve it over baked potatoes to take them up a notch. Any way you serve Parmesan Creamed Spinach, it’s an amazing dish that will turn the hearts of the longest running spinach haters.
