Meijer Meal Planning Week 9/16: 6 Meals for $40

This week, six homemade meals will cost only $40.04!

It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1:  Honey Mustard Pork Chops with Roasted Potatoes and Broccoli  $4.74

  • 2 lb assorted pork chops
  • ½ C mayonnaise (pantry)
  • ¼ C honey (pantry)
  • ¼ C spicy mustard (pantry)
  • Dash of salt (pantry)
  • ½  3 lb bag red potatoes, scrubbed and cut into ½ inch cubes
  • Olive oil (pantry)
  • Salt (pantry)
  • 2 bunches broccoli

Directions:  Place the pork chops on a roasting pan.  In a bowl, mix the mayo, honey, mustard, and dash of salt.  Spoon about ¼ over the chops and spread. Roast in a 400°F oven for 20 minutes.  Turn over and spread another ¼ of the honey mustard on the chops. Return to the oven for another 10 minutes or until the chops are cooked throughout.  While the chops are cooking, place the potatoes on a rimmed baking sheet. Drizzle with oil and sprinkle with salt. Roast with the chops, on a lower rack, turning occasionally.  Steam the broccoli to desired doneness. Serve the chops with the remainder of the honey mustard.

Meal 2:  Hoisin-Glazed Chicken with Rice and Vegetables  $3.17

  • 2 lb chicken thighs
  • ¼ C hoisin sauce (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • 1 bag Meijer Stir Fry Vegetable Medley

Directions:  Place the chicken in a baking dish.  Drizzle with hoisin sauce, cover with foil, and bake in a 400°F oven for 45-60 minutes, until a thermometer inserted into the thigh (not near the bone) reaches 165°F.  Place the rice and water in a large saucepan. Cover and bring to a simmer for 15 minutes, or until the rice is tender and the water is absorbed. Prepare the vegetables as directed on the package.

Meal 3:  Easy Cheeseburger Pie  $6.66

  • 1 tube Pillsbury crescent rolls
  • 1 lb ground beef
  • 1 small onion (pantry)
  • 2 T ketchup (pantry)
  • 1 t mustard (pantry)
  • 2 T flour (pantry)
  • 4 T milk (pantry)
  • 2 C Meijer shredded cheddar

Directions:  Unroll the crescent rolls and place, points in the center, of an 8 or 9 inch pie pan.  Press the edges to seal. Brown the ground beef and onion in a saute pan; drain. Add the ketchup and mustard, stirring well.  Add the flour, stirring, then the milk. Stir until thickened, about 1 minute. Add in 1 cup of cheddar cheese. Pour into prepared pie pan.  Bake in a 375°F oven for 15 minutes, until the crust is browned on the edges. Add remainder of cheese and bake another 3-4 minutes, until melted.

Meal 4:  Bottom Round Roast with Mashers and Vegetables  $7.98

  • 2 lb bottom round roast
  • 3 large onions, peeled and roughly chopped (pantry)
  • Salt and pepper (pantry)
  • ½ 3 lb bag red potatoes, scrubbed and cubed
  • Butter (pantry)
  • Milk (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Place the roast in a slow cooker.  Sprinkle with salt and pepper, top with onions, cover and set to low for 6-8 hours.  Place the potatoes in a large saucepan, cover with water, and simmer for 20-30 minutes, until potatoes are tender.  Drain and mash with butter and milk to desired consistency. Prepare the vegetables as directed on the package.

Meal 5:  Pasta with Meat Sauce  $4.50

  • ½ lb ground beef
  • 2 jars Meijer pasta sauce, any variety
  • 1 box Meijer pasta, any variety

Directions:  Brown the ground beef in a saucepan; drain.  Add the pasta sauce and simmer 20 minutes. Prepare the pasta as directed on the package.  Serve with the sauce.

Meal 6:  Broiled Salmon with Salad  $12.99

  • 1 lb Atlantic salmon filet
  • Salt and pepper (pantry)
  • 1 lemon, sliced thin (pantry)
  • 2 bags Dole Chopped Salad, any variety

Directions:  Pat the salmon dry and place on a rimmed baking sheet.  Sprinkle with salt and pepper and cover with lemon slices.  Broil 8-10 minutes, until fish flakes easily with a fork. Prepare the salad as directed on the package.
