Meijer Meal Planning Week 8/20: 6 Meals $43

Another great week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1: Eye of Round Steaks with Baked Potatoes and Sauteed Squash  $7.67

  • 2 lb eye of round, cut into 4 steaks
  • 4 Russet potatoes, scrubbed and pierced
  • 1 lb zucchini and yellow squash, cubed
  • 1 large onion, sliced (pantry)
  • 2 T olive oil (pantry)
  • Salt and pepper (pantry)
  • Butter (pantry)
  • Sour cream (pantry)

Directions:  Place the potatoes in a 400°F oven for 1 hour or until tender when pierced with a fork.  Season the steaks with salt and pepper.  Grill or broil to desired doneness.  Saute the squash and onion in the olive oil until tender.  Serve the potatoes with the butter and sour cream, if desired.

Meal 2:  Chili Country Style Ribs with Corn Bread  $6.63

  • 2 lbs country style ribs
  • 1 pkg Frontera Red Chili Skillet Taco Sauce
  • 1 pkg Miracle Maize Country Style cornbread mix (plus ingredients per package)

Directions:  Place the ribs in a slow cooker and top with the taco sauce.  Cover and set to low for 6-8 hours.  Remove the meat, shred, and discard bones and fat.  Return the meat to the slow cooker and stir.  Prepare the cornbread per the instructions on the package.  Serve the meat over the cornbread.

Meal 3:  Beefy Tomato Polenta Bake  $6.53

  • 3 C water (pantry)
  • 1 C yellow cornmeal (pantry)
  • ½ t salt (pantry)
  • ¼ C shredded cheddar cheese
  • 1 lb ground beef
  • 1 medium onion, chopped (pantry)
  • 1 medium zucchini, sliced thin
  • 1 T olive oil (pantry)
  • 1 lg can Dei Fratelli petite diced tomatoes, drained
  • 1 6 oz can Meijer tomato paste
  • ¾ C shredded cheddar cheese

Directions:  Bring the water and salt to a boil in a large saucepan.  Slowly add the cornmeal and stir until thickened, about 3 minutes.  Remove from the heat and add in the ¼ C cheddar.  Stir well.  Pour into a greased 9×13” pan.  Brown the ground beef in a saute pan until no pink remains.  Transfer with a slotted spoon to a bowl.  To the drippings, add the onion and zucchini and saute over medium heat for 4-5 minutes.  Return the beef to the pan and add the drained tomatoes and tomato paste.  Stir well.  Pour over the polenta and top with cheese.  Bake in a 350°F oven for 30 minutes or until crust is browned and mixture is bubbly.

Meal 4:  Pork Vindaloo with Rice  $7.57

  • 2 lb boneless pork tenderloin
  • 1 jar Patak’s Concentrated Vindaloo Curry Paste
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place pork in a slow cooker.  Spread the curry paste over the top, cover, and set to low for 6-8 hours.  Place the rice and water in a large saucepan.  Cover and bring to a simmer for 15-20 minutes or until the water is absorbed and the rice is tender.  Shred the pork and place over the rice.

 

Meal 5:  Turkey Sloppy Joes on Tots  $9.82

2 lb Jennie-O ground turkey

2 cans Hunt’s Manwich

1 bag Ore-Ida tater tots

 

Directions: Brown the turkey until no pink remains, adding olive oil if needed.  Add the Manwich and bring to a simmer.  Bake the tater tots per package directions.  Serve the turkey over the tots.

 

Meal 6:  Sausage and Egg Bake  $4.00

  • 1 pkg Tennessee Pride breakfast sausage
  • 8 eggs (pantry)
  • 1 C milk (pantry)
  • 1 C buttermilk baking mix (pantry)
  • 1 C cheddar cheese

Directions:  Brown the sausage until no pink remains; drain.  In a large bowl, whisk the eggs and milk.  Add in the baking mix and whisk until smooth.  Place the sausage in a greased 9×13” pan.  Pour the egg mixture over the top.  Sprinkle with cheese.  Bake in a 350°F oven for 30-40 minutes, until a knife inserted in the center comes out clean.

This week, six mouthwatering meals will cost only $42.22!
