Meijer Meal Planning Week 7/30: 6 Meals $44 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1: Street Tacos  $10.37

  • 1 ½ lb chuck steak
  • 1 pkg Frontera Red Chili taco sauce
  • 1 pkg La Banderita 8 inch soft taco tortillas
  • 3 Roma tomatoes, chopped
  • 1 avocado, peeled and sliced
  • ¼ C chopped fresh cilantro

Directions:  Place the steak and sauce in a slow cooker; cover and set to low for 6-8 hours.  Remove from the slow cooker and shred, discarding any fat.  Return to the slow cooker and stir with the juices.  Assemble the tacos with the tomatoes and avocado.  Sprinkle with cilantro and serve.

Meal 2: Peach Chicken with Rice  $4.27

  • 1 T olive oil (pantry)
  • 1 ½ lb boneless/skinless chicken thighs
  • 4 peaches, sliced ¼ inch thick
  • 2 T brown sugar (pantry)
  • ½ t salt (pantry)
  • ¼ t pepper (pantry)
  • 2 T soy sauce (pantry)
  • ¼ C orange juice (pantry)
  • 1 t ginger, freshly grated (pantry)
  • 2 cloves garlic, minced (pantry)
  • ½ C chicken stock (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the rice and water in a saucepan; cover and bring to a simmer for 20 minutes or until the water is absorbed and the rice is tender.  In a saute pan, heat the oil over medium high heat.  Season the chicken with salt and pepper, add to the pan, and brown on all sides.  Remove to a plate.  To the pan, add the brown sugar, soy sauce, orange juice, ginger, garlic, and stock.  Bring to a simmer.  Add the peaches and cook for 1 minute.  Add the chicken back to the pan, turn to low, cover and simmer until the chicken is cooked through, 5-10 minutes.  Serve with the sauce over the rice.

Meal 3: Slow Cooker Italian Goulash  $6.32

  • 1 lb ground chuck
  • 1 lg can Meijer diced tomatoes
  • 1 jar Prego pasta sauce
  • 1 t dried oregano (pantry)
  • ½ t dried basil (pantry)
  • 2 cloves garlic, minced (pantry)
  • 1 lb box Meijer elbow pasta
  • Parmesan cheese (pantry)

Directions:  Break apart the ground chuck and place in a large slow cooker.  Add the tomatoes, sauce, oregano, basil, and garlic.  Cover and set to low for 6-8 hours.  Add 1 cup of water and the box of pasta.  Stir, turn to high, and cover for 15 minutes or until pasta is tender.  Serve with parmesan, if desired.

Meal 4:  Oven Fried Pork Chops with Baked Cheesy Cauliflower  $8.34

  • 1 ½ lbs assorted pork chops
  • ½ box Cheez-It crackers, crushed into crumbs
  • 2 eggs, whisked (pantry)
  • 1 head cauliflower, cut into florets
  • 6 T butter (pantry)
  • ½ C heavy cream
  • 3 cloves garlic, minced (pantry)
  • 2 C extra sharp cheddar, shredded
  • 1 C parmesan (pantry)
  • Salt (pantry)
  • Pepper (pantry)

Directions:  Steam the cauliflower in the microwave for 5 minutes.  Place half the cauliflower in a baking dish and pour half of the cream over the top.  In a bowl, mix the garlic, cheeses, salt and pepper.  Sprinkle half over the cauliflower, top with more cauliflower, and the remaining cream and cheese mixture.  Bake in a 400°F oven for 30 minutes, until bubbly and tender.  Dip the pork chops in the whisked eggs, then into the crackers.  Place on a baking sheet and bake in a 400°F oven for 15-20 minutes, until no pink remains in the pork.  Serve with the cauliflower.

Meal 5: Bratwurst Grill Packets  $5.75

  • 1 pkg  Johnsonville brats, cut into 1-inch chunks
  • 1 large onion, sliced (pantry)
  • 2 lbs red potatoes, washed and quartered
  • ½ lb baby carrots
  • 4 T butter, cut into 5 patties (pantry)
  • 1 pkg Meijer dry onion soup mix
  • Aluminum foil (pantry)

Directions:  Place a five double thickness of foil large enough for each packet on the counter.  Divide all the ingredients between the packets.  Fold them up and seal them tightly.  Grill on medium high for 20 minutes per side, or until the vegetables are tender and the meat is no longer pink.

Meal 6:  Grilled Ranch Chicken Thighs with Salad  $8.95

  • 2 lbs boneless/skinless chicken thighs
  • 1 bottle Kraft ranch dressing
  • 1 bag Dole salad blend
  • 1 cucumber, diced
  • ½ lb Roma tomatoes, diced
  • Salad dressing of choice (pantry)

Directions:  Grill the chicken over medium heat, brushing with the ranch dressing, until no pink remains in the center.  Place the remaining ingredients in a bowl and serve with the chicken.

This week, six fresh meals will cost only $44.00!
