Meijer Meal Planning Week 2/25: 6 Meals for $40 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1:  Beef Enchiladas with Tomato Salad $9.10

  • 1 ½ lb ground beef
  • ½ pkg La Banderita corn tortillas
  • 1 bag Meijer shredded cheddar cheese, ½ C reserved
  • 1 28 oz can Herdez Red or Green enchilada sauce
  • 1 container grape tomatoes, chopped
  • 1 sweet onion, chopped (pantry)
  • ½ C olive oil (pantry)
  • ¼ C red wine vinegar (pantry)
  • Salt and pepper (pantry)

Directions:  Brown the ground beef and drain.  Assemble the enchiladas by placing a corn tortilla on a flat surface; place the ground beef in a line across the center of the tortilla and top with some cheese.  Roll into a tube and place in a 9×13 baking dish.  Repeat with the remaining beef and cheese until the pan is full.  Top with the the enchilada sauce, cover with aluminum foil, and bake in a 350°F oven for 1 hour.  Remove foil, sprinkle reserved cheese on top, and bake another 5 minutes or until the cheese is melted.  While the enchiladas are baking, place the tomatoes, onion, oil, and vinegar in a bowl.  Toss and season with salt and pepper.  Serve with the enchiladas.

Meal 2:  Grilled Italian Chicken with Salad  $6.66

  • 2 boneless/skinless chicken thighs (about 1 lb)
  • ½  bottle Wish-Bone Italian salad dressing
  • 2 Romaine hearts (from 3 pack)
  • ½ pt grape tomatoes, cut in half
  • 1 yellow pepper, chopped
  • Salad dressing of choice (pantry)

Directions:  Remove the bones from the chicken and butterfly.  Place in a large plastic zippy bag with the Italian dressing.  Let marinade for at least 4 hours or overnight.  Grill the chicken until no pink remains in the center.  Place the remaining ingredients in a bowl.  Serve with the chicken.

Meal 3:  Cajun Dirty Rice  $5.97

  • 1 lb ground beef
  • 1 onion, diced (pantry)
  • 2 pouches Uncle Ben’s Red Beans and Rice

Directions:  Brown the ground beef and onion in a saute pan over medium heat; drain.  Add the beans and rice, stirring to mix with the meat.  Heat through, until beans are hot and rice is tender, about 10 minutes.

Meal 4:  Turkey Barley Vegetable Soup  $8.95

  • 1 lb ground turkey (frozen)
  • 1 T olive oil (pantry)
  • 1 onion, diced (pantry)
  • 2 carrots, sliced (pantry)
  • 2 stalks celery, sliced (pantry)
  • 2 boxes True Goodness chicken stock
  • ½ C Gefen pearl barley
  • ½ 10 oz pkg New Star baby spinach

Directions:  Brown the turkey and onion with the olive oil in a stockpot.  Add the carrots, celery, and chicken stock.  Simmer 30 minutes, until carrots are tender.  Add the barley and cook until tender, 25 to 30 minutes.  Stir in the spinach and serve.

Meal 5:  Smoked Sausage Skillet  $3.79

  • 1 pkg Hillshire Farms smoked sausage, cut into ¼ inch slices
  • ¼ c olive oil (pantry)
  • 2 cloves garlic, minced (pantry)
  • 1 onion, diced (pantry)
  • 1 bag Meijer broccoli cuts, thawed
  • ½ C water (pantry)
  • ½ C tomato sauce (pantry)
  • 2 C rice (pantry)
  • 4 c water (pantry)

Directions:  In a large skillet, brown the sausage in the olive oil with the onion and garlic.  Add the broccoli, ½ C water, and tomato sauce.  Bring to a simmer.  In a saucepan, place the rice and water.  Cover and bring to a simmer for 20 minutes or until the rice is tender and the water is absorbed.  Stir the rice into the sausage mixture.

Meal 6:  Creamy Chicken and Pasta  $5.67

  • 1 ½ lb boneless skinless chicken thighs, cubed
  • 2 cans Meijer Cream of Mushroom soup
  • 1 box Meijer green box pasta, any variety

Directions:  Place the chicken and soup in a slow cooker.  Cover and set to low for 6-8 hours.  Prepare the pasta as directed on the package.  Serve the chicken over the pasta.
