Meijer Meal Planning Week 1/7: 6 Meals $39 Bucks!

This is the week of 1/7 of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1: Island Teriyaki Ribs with Rice and Pan-Fried Green Beans  $6.21

  • 2 lbs country ribs
  • 1 8 oz can Meijer pineapple chunks in juice
  • ¼ C soy sauce (pantry)
  • 2 T olive or sesame oil (pantry)
  • 3 cloves garlic, minced (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • 2 lb fresh green beans, ends trimmed
  • 2 T butter (pantry)

Directions:  Place the ribs in a slow cooker.  In a bowl, mix the pineapple, including juice, soy sauce, oil, and garlic.  Pour over the ribs, cover, and set to low for 6-8 hours.  Place the rice and water in a large saucepan.  Cover and bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed.  In a saute pan, melt the butter.  Add the beans and saute until slightly caramelized.  Serve the ribs over the rice, if desired.

Meal 2: Sausage Kabobs with Mac & CHeese  $5.86

  • 1 pkg Eckrich smoked sausage, cut into ½ inch chunks
  • 1 zucchini, cut into chunks
  • ½ pkg white button mushrooms, cleaned
  • 1 onion, cut into chunks (pantry)
  • 1 box Velveeta Shells & Cheese

Directions:  Place the meat and veggies on skewers.  Broil to desired doneness.  Prepare the shells & cheese as directed on the package.

Meal 3:  Barbecue Chuck Roast with Mashed Potatoes $11.36

  • 2 lb chuck roast
  • 1 bottle Sweet Baby Ray’s barbecue sauce
  • 2 ½ lb red potatoes, peeled and cut into chunks
  • Milk and butter (pantry)

Directions:  Place the chuck roast in a slow cooker and pour the barbecue sauce over the top.  Cover and set to low for 6-8 hours.  Place the potatoes in a saucepan and cover with water.  Bring to a boil for 20 minutes, or until the potatoes are tender.  Drain and mash with butter and milk to desired consistency.

Meal 4:  Turkey Meatloaf with Salad  $5.37

  • 1 lb ground Jennie-O turkey
  • 1 egg (pantry)
  • ½ C bread crumbs (pantry)
  • ½ t oregano (pantry)
  • ¼ t basil (pantry)
  • ½ t salt (pantry)
  • ¼ t pepper (pantry)
  • 1 head Romaine lettuce (from 3 pk), diced
  • ½ pkg Campari tomatoes, diced
  • ½ cucumber, peeled and diced
  • Salad dressing of choice (pantry)

Directions:  In a bowl, mix the turkey, egg, breadcrumbs, and seasonings until well mixed.  Place on a rimmed baking sheet and form into a loaf.  Bake in a 350°F oven for 1 hour, until the center is fully cooked.  Place the remaining ingredients in a bowl and mix.  Serve the salad with the meatloaf.

Meal 5:  Pasta with Meat Sauce  $6.99

  • 1 lb ground chuck
  • 2 jars Prego pasta sauce
  • ½ t oregano (pantry)
  • ¼ t basil (pantry)
  • 2 cloves garlic, minced (pantry)
  • 1 lb Meijer pasta, any variety

Directions:  In a bowl, mix the meat, oregano, basil, and garlic.  Crumble into a slow cooker.  Top with sauce, cover, and set to low for 6-8 hours.  Prepare the pasta as directed on the package.  Serve the sauce over the pasta, with parmesan if desired.

Meal 6:  Chicken and Vegetable Stir Fry with Rice  $3.58

  • 1 lb boneless/skinless chicken breast, diced
  • 2 T olive or sesame oil (pantry)
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 onion, diced (pantry)
  • 2 cloves garlic, diced (pantry)
  • 1 carrot, thinly sliced (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the rice and water in a saucepan and bring to a simmer for 20 minutes or until the rice is tender and the water is absorbed.  Heat a saute pan over medium high heat.  Add the oil and chicken and cook until no pink remains in the chicken.  Add the vegetables and saute until tender.  Serve over the rice with soy sauce.
