Meijer Meal Planning is back! With winter in full swing, it’s a great time to break out your slow cooker or roasting pan and make some wonderful homecooked comfort food.  Here are 6 great recipes to save you money and maximize your family’s dinner.

Meijer Meal Planning 2/1: 6 Meals Under $43

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!  We aren’t talking everything from a box either!  These are pretty healthy meals, at a low Meijer price that will be pretty quick and easy to make any night of the week. You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )
  • We only have 6 days, since I use a day to let the kids make their own dinner night, or use leftovers, or pull a Frozen Pizza from my stockpile.

Meal 1 – Lemon Roasted Pork with Sweet Potatoes and Veggies  $10.31

3 lb pork Center Cut Half Boneless Pork Loin

2 lemons, sliced thin (pantry)

salt and pepper (pantry)

4 sweet potatoes, scrubbed and diced (½ inch cubes)

1 stick butter (pantry)

1 C sugar (pantry)

1 bag Meijer frozen vegetables

 

Directions: Place the pork loin in a slow cooker.  Sprinkle with salt and pepper and cover with lemon slices.  Cover and cook on low for about 6 hours.  About 45 minutes before serving, place the butter, brown sugar, and diced sweet peppers in a saute pan.  Heat over medium heat, stirring when the butter is melted.  Cover and let simmer for about 35 minutes, stirring occasionally, until the potatoes are tender.  Heat the vegetables as desired.  Serve hot.

 

Meal 2 – Barbecue Pulled Pork and Fries $3.50

1 ½ lbs leftover pork roast

1 bottle favorite barbecue sauce (pantry)

Aunt Millie’s hamburger buns

1 bag Meijer fries

Directions: Shred the leftover pork and place in a small slow cooker.  Mix in the barbecue sauce and stir.  Cover and set to low for 4 hours.  Bake the fries as directed on the package and serve with pulled pork placed on buns.

Meal 3 – Brats in Sauerkraut and Baked Potatoes $6.19

1 pkg Meijer fresh brats

1 pkg Meijer sauerkraut

4 Russet baking potatoes

butter (pantry)

salt and pepper (pantry)

Place the sauerkraut, juice and all, in the bottom of a 2 qt slow cooker.  Top with the brats and cover.  Turn on low for about 6 hours.  Scrub the baking potatoes and pierce with a fork.  Bake in a 400°F oven for about an hour.  Serve hot with butter, salt, and pepper.

Meal 4 – Fish Tacos $7.28

1 pkg Gorton’s Fish Fillets

½ C mayonnaise (pantry)

¼ C relish (pantry)

2 T brown mustard (pantry)

½ head Iceberg lettuce, shredded

½ C diced tomatoes

1 pkg soft flour taco tortillas

Directions:  Bake the fish according to package directions, until fish is crunchy.  In a bowl, mix the mayonnaise, relish, and mustard.  To assemble, place a fish fillet on a tortilla.  Top with tartar sauce, lettuce, and tomatoes.

Meal 5 – Orange Chicken Stir Fry over Rice $6.75

2 lbs boneless skinless chicken thighs

2 oranges, 1 sliced, 1 juiced

¼ t red pepper flakes (pantry)

1 bag Asian stir fry mix

3 cups hot cooked rice (pantry)

Directions:  Place the chicken and stir fry vegetables in a slow cooker.  Top with orange juice and slices and red pepper flakes.  Cover and cook on low 4-6 hours.  Serve over hot rice.

Meal 6 – Easy Hamburger Stew  $8.24

1 lb ground round

1 bag Meijer frozen mixed stew vegetables

salt and pepper (pantry)

1 t dried oregano (pantry)

1 28 oz cans diced tomatoes

1 6 oz can tomato paste

½ lb spaghetti, broken into 2 inch pieces

Directions:  Brown and drain the ground round; place in a large slow cooker.  Add the vegetables, salt, pepper, oregano, diced tomatoes and paste.  Stir.  Add water to cover ingredients if needed.  Cook on low 4-6 hours.  About 30 minutes before serving, turn slow cooker to high.  Add pasta and cook until tender.  Serve with crusty bread.

There you have it!  Six fantastic and easy meals for only $42.27!
