Meijer Meal Planning Week 1/31 : 6 Meals Under $50

For this week the Meijer Matchups posted here on Fresh Outta Time, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1: Pulled Pork Sammies with Chips  $13.38

  • 5 lb pork shoulder
  • Salt (pantry)
  • Pepper (pantry)
  • 1 bottle Sweet Baby Ray’s barbecue sauce, any variety
  • 1 pkg Meijer hamburger buns
  • 1 bag Ruffles potato chips, any variety

Directions:  Place the pork shoulder in a large slow cooker, season well with salt and pepper, cover and set to low for 6-8 hours.  Remove the shoulder from the slow cooker, shred the meat, discarding any fat and bones. Serve on the buns with barbecue sauce and chips.  Reserve half the meat for the next meal.

Meal 2:  Street Tacos  $4.76

  • Leftover shredded  pork shoulder
  • 1 t garlic powder (pantry)
  • 1 t salt (pantry)
  • 1 t ground cumin (pantry)
  • ½ pkg Campari tomatoes, diced
  • 1 jalapeno, seeds removed and diced
  • 1 pkg La Banderita flour tortilla family pack (20 count)

Directions:  Place the shredded pork in a slow cooker and mix in the garlic powder, salt, and cumin.  Set to low for 1-2 hours, adding ¼ cup of water if needed to keep the meat moist. In a bowl, mix the diced tomatoes and pepper.  Serve the meat on warmed tortillas with the fresh salsa on top.

 

Meal 3:  Honey Chicken with Rice and Vegetables  $2.76

  • 2 lb chicken thighs
  • Salt (pantry)
  • Pepper (pantry)
  • 5 cloves garlic, peeled and diced (pantry)
  • 3 T apple cider vinegar (pantry)
  • ⅓ C honey (pantry)
  • ¼ c water (pantry)
  • 1 T soy sauce (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Season the chicken with salt and pepper.  In a saute pan over medium-high heat, sear the chicken until browned on both sides.  Cover and cook until no pink remains in the center, turning occasionally. Remove cover and add the garlic, sauteing until the garlic releases the aroma.  Add the vinegar, honey, water, and soy sauce, cooking until thickened and spoon over the chicken. While the chicken is cooking, place the water and rice in a large saucepan.  Cover and bring to a simmer for 15 minutes or until the water is absorbed and the rice is tender. Prepare the vegetables as directed on the package. Serve the chicken and sauce over the rice.

Meal 4:  Parmesan Crusted Perch with Sauteed Asparagus  $8.36

  • 1 pkg Meijer frozen perch, thawed and patted dry
  • 1 envelope Shake ‘n Bake parmesan crusted flavor
  • 1 bunch asparagus, washed and cut ends trimmed
  • 2 T butter (pantry)

Directions:  Place the contents of the Shake ‘n Bake in a shallow bowl.  Coat the perch in the mixture and place on a lightly greased baking sheet.  Place the perch in a 400°F oven and bake until the fish flakes easily with a fork, 10-15 minutes.  While the fish is baking, melt the butter in a saute pan over medium-high heat. Add the asparagus and saute until slightly browned.  Serve with the fish.

Meal 5:  Italian Simmered Ribs with Pasta  $5.37

  • 2 lb Country style ribs
  • 1 jar Meijer pasta sauce
  • 1 t oregano (pantry)
  • ½ t garlic powder (pantry)
  • 1 pkg Meijer pasta, any variety

Directions:  Place the ribs in a slow cooker and top with the pasta sauce.  Add in the oregano and garlic powder. Cover and set to low for 6-8 hours.  Prepare the pasta as directed on the package. Serve the ribs and sauce over the pasta.

Meal 6:  Cheesy Baked Pierogies with Tomato Salad  $10.73

  • 2 boxes Mrs. T’s Pierogies
  • 2 jars Meijer Four Cheese Alfredo sauce
  • 1 container Campari tomatoes, chopped
  • 1 greenhouse cucumber, sliced thin
  • ½ C red wine or white vinegar (pantry)
  • 1 t salt (pantry)
  • ½ t pepper (pantry)

Directions:  In a greased casserole dish, mix the pierogies and sauce.  Cover and bake in a 400°F oven for 1 hour or until the pierogies are tender when pierced with a fork.  In a bowl, mix the remaining ingredients. Serve the salad with the pierogies.

This week, six meals for your family cost only $45.36!
