I love it when I can pull out some delicious fresh dessert from the freezer and bake it up for family and friends. Easy Apple Pie is no different. It’s a combination of baked apple and apple pie that you can take out of your freezer and have ready within an hour. Apples freeze well, and bake even better. I love to make individual Easy Apple Pie, especially when there’s kids, as they love having a whole pie to themselves.  With just a few simple ingredients, you can have a freezer full of Easy Apple Pie ready when you need them.

Easy Apple Pie: The Apples

Choose a Good Baking Apple for Easy Apple Pie

I love to use Granny Smith apples in Easy Apple Pie.  They hold together well, have a great flavor, and freeze beautifully.  Plus, they are available year round in most places, making them a perfect choice when they go on sale.  You can also check orchards and farmers markets in your area for other options.  There are a lot of great apple varieties out there that bake up wonderfully.  I love to make Easy Apple Pie with a variety of apples, red, green and yellow, for a show of fall color and to make the dish even prettier.

5 apples in any baking variety

¼ C sugar

1 t ground cinnamon

1 T flour

1 pkg refrigerated pastry crust (when baking)

 

Cut the tops off 4 of the apples, about ½ inch down from the top.

Run a knife around the apple, ¼ inch from the skin.  Remove center, being careful to leave the bottom solid.

Trim the center pieces, removing the core.  Discard the core and set the center pieces in a bowl.

Peel the 5th apple, coring and dicing.  Place in the bowl.

Mix the apple pieces with the sugar, cinnamon, and flour.

Fill the apple cups with the sweetened apple pieces.

At this point, you can freeze the apples for later use.

Heat oven to 375 degrees F.

Cut the pie crust half, then into short strips.

Basket weave 6-8 strips and press flat.

Transfer to the apples.  Place in a casserole dish.

Bake 45-50 minutes, until the apples are tender.

Serve warm or cool.

Freezer Friendly Recipes: Easy Apple Pie

It’s easy to freeze Easy Apple Pie.  I wrap the apples, without the pie crust, in plastic wrap and freeze them.  Once they are totally frozen, I carefully place them in a big plastic zippy bag and put them back in the freezer.  They will stay for months that way.  When you want to bake them, simply unwrap them and cover with pie crust, as instructed.  Bake for an extra 10-15 minutes, until the apple is soft when pierced with a knife.  Easy Apple Pie makes for the perfect dessert anytime!
