Cucumber Tomato Salad {Light Summer Meal}
This classic salad was on every picnic table and weekend BBQ spread I ever attended as a child. It’s a classic that my grandma taught my mom and my mom taught me. Just a few simple fresh vegetables from her garden with a splash of this and a dash of that and we had what is most commonly known as the Cucumber Tomato Salad.
These are ingredients that will be cheap to purchase throughout the summer- even free (if you grown your own veggies!) We have, I mean my husband is working on our garden and it is slowly getting there!

Cucumber Tomato Salad ({Light Summer Meal}
Ingredients
- 2 Medium Tomatoes Sliced Thin
- 2 Large Cucumbers Sliced Thin (we wash and leave skin on – some prefer to peel)
- 1 Small Red Onion Sliced Thin
- 1/3 Red Wine Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Teaspoon Dried Dill
- Salt & Pepper to Taste
Instructions
- Toss all ingredients together in large bowl. Allow to marinate and chill overnight. Serve cold.
